Apple Berry Crisp
Ingredients
o 6 apples, peeled and thinly sliced (I recommend McIntosh)
o 1/3 cup blueberries (fresh or frozen)
o 1/3 cup raspberries (fresh or frozen)
o 1 cup flour
o 1 cup oats
o 2/3 cup brown sugar
o ½ cup (1 stick) cold butter, cubed
o ¼ tsp salt
o ½ tsp cinnamon
Directions
1. Preheat oven to 375º and grease a 9 x 13 in baking dish.
2. Arrange the apples and berries in the prepared baking dish.
3. Combine the rest of the ingredients in a medium bowl and mix together. Use your fingers to mash the butter into the flour and oats until combined.
4. Sprinkle the oat mixture over the fruit, evening out as needed.
5. Bake in the oven for 29 minutes.
6. Serve warm with vanilla ice cream or whipped cream.
Growing up, my mom would always make apple berry pies. We would even have pie instead of cake for birthdays. This crisp was a simpler way to deliver those wonderfully delicious apples and berries. The key here, and with any type of apple pie, is to slice the apples thinly. My mom is a master at slicing the apples thinly, in about two seconds without injuries – can’t relate.
