Auntie Dorothy’s Yorkshire Scones
Ingredients
o 1 cup of butter (2 sticks)
o 1 cup of sugar
o 4 eggs
o 4 cups self-rising flour
o 3 cups of dried fruit (raisins, craisins, golden raisins, etc.)
Directions
1. Preheat the oven to 375º and line a baking sheet with parchment paper.
2. Cream the butter and sugar in a large bowl with an electric mixer.
3. Whisk the eggs in a separate bowl until bubbly on top. Pour the whisked eggs into the butter sugar bowl and mix until combined, but save a tablespoon or two of the whisked eggs to brush the tops of the scones with later.
4. Fold in the flour and stir well to combine then add in the mixed dried fruit.
5. Form the dough into balls and place on the baking sheet. Brush the tops of the scones with the reserved egg wash.
6. Bake in the oven for 15-20 minutes (I usually do 14).
7. Serve plain or with assorted jams.
This is a family recipe courtesy of Auntie Dorothy (technically my great great aunt) from Yorkshire. I promise that these will be the best scones you’ve ever had. They are really easy to make, super flavorful, and most importantly, they aren’t at all dry.
