Blueberry Banana Mug Muffin
Ingredients
o 1 banana
o ¼ cup of flour
o ¼ cup of milk
o 1 tbsp yogurt (your choice)
o ¼ teaspoon baking powder
o ¼ teaspoon of salt
o ¼ tsp vanilla
o ½ tbsp honey (optional)
o Handful of frozen or fresh blueberries
Directions
1. Mash the banana in the mug first.
2. Add in the flour, milk, yogurt, baking powder, salt, vanilla, and honey if using. Stir to combine.
3. Add in the blueberries and gently mix.
4. Cook in the microwave for 2 minutes. Add 30 seconds for a firmer muffin.
5. Top with butter or jam and eat immediately.
Around junior year of college, I discovered the beauty of microwave mug dishes. I mostly made desserts with them (mug cookies, mug brownies, etc.), but I wanted to transfer the beauty of the microwave mug dish to breakfast because sometimes you need breakfast quickly. This is my blueberry banana mug muffin that’s much faster than an entire loaf of banana bread, but just as delicious.
