Cod with Garlic Shallot Sauce

Ingredients

o   1 lb cod, in ~4 filets

o   salt and pepper

o   4 tbsp olive oil

o   4 tbsp butter

o   1 shallot, finely chopped

o   2 cloves garlic, minced

o   2 tbsp white wine vinegar

o   Juice of 1 lemon

o   parsley (1 tsp dried or 1 tbsp fresh)

Directions

1.     Pat the fish dry with a paper towel or cloth (this makes searing it much easier so be sure the fish is dry) then season each side with salt and pepper.

2.     Heat the olive oil over medium high heat in a medium cast iron pan. Once hot, add the cod and cook 3-4 minutes on each side, or until there’s a nice golden brown sear. Once done, remove the cod from the pan.

3.    Lower the heat to low/medium low and give the pan a minute or two to cool down.

4.    Add 1 tbsp of butter to the pan followed by the shallots and garlic. Cook until softened (3-5 minutes, depending on the heat of the pan).

5.    Add the white wine vinegar to deglaze the pan, scraping up any browned bits on the bottom.

6.    Stir in the remaining 3 tbsp of butter, the lemon juice, and parsley.

7.    Place the cod back in the pan to warm and spoon the sauce heavily over each piece.

5.    Serve with additional lemon and parsley.

We have cod regularly at my house and it used to always be the baked breadcrumb version, until one day when I decided to switch it up and try it with a garlic shallot sauce as garlic and shallots make everything better. I absolutely love this sauce and could probably eat it on its own.

P.S. Make sure you dry the fish!
