Crispy Brussels Sprouts

Ingredients

o   2 lbs Brussels sprouts

o   4 tbsp olive oil

o   Kosher salt

Directions

1.     Preheat the oven to 425º.

2.    Slice the sprouts into thirds then toss with the olive oil and a hefty pinch or two of salt. Arrange the sliced sprouts on a large rimmed baking sheet.

3.     Bake the sprouts for 20 minutes, toss on the pan, then return to the oven for an additional 15-20 minutes.

4.     Serve immediately with additional salt as desired.

Brussels sprouts got a bad rep for the longest time, but they seem to be on their way back. Most people douse them in bacon or lemon or garlic, but I think all you need is olive oil and salt for a delicious snack or side.
