Dark Chocolate Truffles
Ingredients
o 4 oz 60% cacao chocolate bar*
o 4 oz 90% cacao chocolate bar*
o 2/3 cup milk
o flaky sea salt
o ground nuts (optional)
Directions
1. Thoroughly chop/shave the chocolate and place in a small bowl (smaller pieces will be easier to melt).
2. Warm the milk either in the microwave or in a small saucepan — it should not be boiling, but it should be between warm and hot. Pour the heated milk over the shaved chocolate then cover the bowl with a cutting board and let sit for 5 minutes.
3. Remove the cutting board and whisk the chocolate milk mixture. If some of the chunks aren’t melting, you can microwave the bowl for 30 seconds. Once all the chocolate has melted into the milk, cover the bowl with plastic wrap and place it in the fridge for a couple hours.
4. Once the chocolate has chilled, roll it into small truffle balls (as you can see from the photo, I am not very good at this so just do the best you can).
5. Top the truffles with flaky sea salt or roll them in ground nuts (I like pistachios and hazelnuts).

*You can also use chocolate chips or whatever cacao percentage you have
These are so easy and so delicious. There’s also no added sugar — just what’s been added to the cacao. The true chocolate lovers could probably do only 90% cacao, but I like the 60% and 90% combo. Before you know it, you’ll be making these twice a week.
