Fish Chowder

Ingredients

o   4 tbsp butter

o   1 large onion, diced

o   3 carrots, chopped

o   3 celery stalks, chopped

o   5 yellow potatoes, cubed

o   3 cups veggie broth

o   2 lbs cod, cubed

o   3 tsp salt

o   ¼ tsp pepper

o   1 ½ tsp fresh dill, chopped

o   2 cups whole milk

Directions

1.     Melt the butter in a large pot or dutch oven over medium heat.

2.     Add the onions and cook until translucent, around 5 minutes.

3.     Add the carrots, celery, and potatoes and cook for another 5 minutes.

4.     Add the broth, fish, salt, pepper, and dill, stirring to combine.

5.     Bring the chowder to a simmer then reduce the heat to low and cook, stirring occasionally, for around 4 hours, until the fish and potatoes are cooked. In the last hour of cooking, stir in the milk.

6.     Serve with additional dill, freshly ground black pepper, and crusty bread.

This is an old family recipe from my nana when she was growing up in Boston. The original recipe is very simple, pretty much just onions, butter, and fish, but over the years my nana (then mom) started adding other things, like the carrots and celery, to create this lovely recipe. When served with bread, this chowder is hearty enough to be an entire meal and never fails to impress dinner party guests. Plus, it’s made ahead of time and makes the whole house smell amazing.
