French Toast with Blueberry Syrup
Ingredients
o 4 eggs
o 1 cup milk
o 2 tsp cinnamon
o 1 tsp vanilla
o pinch salt
o 1/2 loaf day old bread, thickly sliced
o oil or butter for cooking
o 1/4 cup maple syrup (high quality)
o 1/4 cup blueberries (fresh or frozen)
Directions
1. Whisk together the eggs, milk, cinnamon, vanilla, and salt.
2. Heat the oil or butter in a medium non-stick pan over medium heat. While the pan is heating up, soak the first piece of bread in the egg milk mixture.
3. Once the pan is hot, add the first piece of bread and cook until golden brown on each side (3-5 minutes). While the first piece of bread is cooking, add the second piece of bread to the egg milk mixture to soak. Continue this until all of the bread has been cooked.
4. Meanwhile, combine the syrup and blueberries in a small pan and heat on medium low, stirring occasionally, until the syrup is warm and has integrated with the blueberries (5-10 minutes).
5. Top the french toast with the blueberry syrup and any additional desired toppings (like whipped cream!).
My mom once got me blueberry syrup from Maine and it was the best thing ever. To replicate it at home once I finished the jar, I just heated up blueberries and syrup together. It was just as good and paired beautifully with french toast. This breakfast is the perfect lazy Sunday meal as it comes together quickly and tastes delicious. You can use regular sandwich bread, but it’s the best with a proper loaf that’s a day or two old.
