Grapefruit Arugula Salad

Ingredients

Salad

o   3 large handfuls of arugula

o   ~2 tbsp roughly chopped fresh mint, from ~3 sprigs

o   ½ large grapefruit, cut into 1 inch chunks

o   ¼ roughly chopped almonds

o   2 tbsp crumbled goat cheese

Grapefruit Dressing

o   2 tbsp olive oil

o   1 tsp dijon mustard

o   1 tbsp grapefruit juice (freshly squeezed)

o   salt and pepper

Directions

1.     Make the dressing: whisk the olive oil, dijon, and grapefruit juice together in a small bowl then season with salt and pepper.

2.    Combine the arugula, mint, and dressing in a large bowl, then mix thoroughly.

3.     Top the salad with the grapefruit chunks, chopped almonds, and crumbled goat cheese.

I absolutely adore grapefruit and would put it in everything. Sadly, it’s not for everyone, but I think even the grapefruit haters would enjoy this grapefruit dressing. At the very least, they’ll have to admit that grapefruit adds a lovely pop of pink to whatever it’s in.
