Mango Overnight Oats
Ingredients
o ½ cup of oats
o ½ cup of milk of your choice
o 1 tbsp maple syrup (optional)
o 1 tbsp chia seeds
o 1 tbsp shredded coconut
o ¼ cup cubed mango (fresh or frozen)
Directions
1. Combine the oats, milk, maple syrup, chia seeds, coconut, and half of the mango in a jar that has a lid (I use old jam or peanut butter jars). You can mix with a spoon or just close the jar and shake it vigorously.
2. Uncap the jar and place the rest of the mango on top.
3. Leave in the fridge for a few hours or overnight and enjoy.
The first time someone told me about overnight oats, I thought they sounded awful. Cold mushy oatmeal? Hard pass. But eventually the ease of not having to worry about making breakfast in the morning drew me in and it turns out that overnight oats can be quite lovely. My one (lazy) complaint with most overnight oats recipes is the number of kitchen tools (and therefore cleanup) that they require. My recipe only uses a ½ cup measurer and a tablespoon, but after making this a few times, you can just eyeball the tablespoon measurements.
