Morning Muesli

Ingredients

o   ½ cup oats

o   ½ cup yogurt (your choice)

o   1 tbsp chia seeds

o   1 tbsp flax seeds

o   1 tbsp pumpkin seeds

o 1 tbsp hemp seeds

o   1 tbsp shredded coconut

o   1 tsp bee pollen

o   1 banana, sliced

o   1 tsp honey (optional)

Directions

1.     Spread the yogurt in a small bowl then layer on the rest of the ingredients: oats, chia seeds, flax seeds, pumpkin seeds, hemp seeds, shredded coconut, bee pollen, banana, and honey if using.

2.     Let the bowl sit for a few minutes to let the oats soak up some of the moisture of the yogurt then enjoy.

I stumbled across a bag of muesli at the grocery store one day and decided to give it a try. I really enjoyed it, but didn’t love the price tag and felt like I could pull together something comparable at home, which is how I created this recipe. I don’t know if it’s officially “muesli,” but it’s very yummy, filling, and comes together quickly. You can even let it sit during your morning commute, which hopefully isn’t too long.
