Pepper Pesto Panini
Ingredients
o 1 red bell pepper
o 3 ciabatta rolls
o 3 slices cheddar cheese
o ¼ cup sliced red onion
o ¼ cup pesto
o 2 tbsp mayo (optional)
o Salt and pepper
Directions
1. Preheat the oven to 400º and put a piece of aluminum foil on a baking sheet.
2. Place the bell pepper on the aluminum foil and bake for 30 minutes, rotating every 10 minutes, until there’s a nice char. Remove from the oven and wrap the aluminum foil around the pepper loosely. After a couple minutes, remove the aluminum foil and slice the pepper into 6-8 pieces.
3. Preheat the panini machine to medium high (can also grill these or sear them in a pan).
4. Assemble the sandwich. Spread the mayo on one ciabatta end and the pesto on the other then add in the rest of the ingredients and season with salt and pepper.
5. Grill in the panini machine until desired doneness – a couple minutes for the cheese to melt and the char marks to appear on top of the bread.
Not much to say about this panini except that it’s delicious and easy to make! I recommend using homemade pesto and fresh rolls. Additionally, you can use roasted red peppers from a jar, but be sure to drain them beforehand so that the sandwich isn’t soggy. Enjoy!
