Triple Berry Spiced Banana Bread
Ingredients
o 4 overly ripe bananas, mashed
o ¼ cup olive oil
o ¼ cup maple syrup
o 2 eggs
o 2 tsp vanilla extract
o 1 ½ cups flour
o 1 ½ tsp baking soda
o ½ tsp salt
o 1 ½ tsp chai spice (or ¾ tsp cinnamon, ¼ tsp each of cardamom, ground ginger, allspice, and nutmeg)
o 1 ½ cups mixed berries (blueberries, raspberries, blackberries, etc.)
Directions
1. Preheat oven to 350º and grease a 9x5in loaf pan.
2. Whisk together the mashed bananas, olive oil, syrup, eggs, and vanilla extract.
3. Stir in the flour, baking soda, salt, and chai spice until just combined.
4. Fold in the mixed berries.
5. Transfer to the prepared loaf pan and bake for 46-54 minutes.
Note: You can let it sit in the pan once it’s out of the oven for a few minutes to firm it up. If you either can’t wait or prefer a gooier bread, you can remove it right away.
My family goes through a million bananas a day because we put them in all our smoothies. This meant that I used to have to hide bananas throughout the house so that I could use them in a few days for banana bread. When I finally was able to make banana bread, I would always get requests from different family members for different additions. My dad always wanted nuts, my mom always wanted chocolate chips, meanwhile I always wanted blueberries. This is my version of banana bread with the mixed berries, but if you’re like my dad you can substitute the berries for nuts and if you’re like my mom you can substitute the berries for chocolate, or you can throw everything in.
