Apple Puffs

Ingredients

o   2 cups applesauce

o   ¼ cup olive oil

o   2 eggs

o   2 tsp vanilla

o   1 ¾ cups flour

o   1 ½ tsp baking soda

o   ½ tsp salt

o   ¼ cup sugar

o   ½ tsp cinnamon

o   2 tbsp melted butter

Directions

1.     Preheat the oven to 350º and line a mini muffin tray with muffin liners.

2.    Whisk together the applesauce, olive oil, eggs, and vanilla in a large bowl.

3.     Mix in the flour, baking soda, and salt until combined.

4.     Fill each mini muffin liner with the batter (~2 tbsp each). Bake for 8-10 minutes then place on a cooling rack.

5.     Meanwhile, combine the sugar and cinnamon in a small shallow bowl and melt the butter in a small pan or the microwave.

6.     Once the muffins have cooled slightly, dip each muffin top in the butter followed by the cinnamon sugar.

My nana used to make apple puffs all the time over the summer and they barely lasted five minutes once out of the oven. Mine are a little different, using homemade applesauce and no sugar in the batter, but they’re still addicting and perfect for the fall.
